Sweet & Sour Chicken

Items Needed:
Cherry Lime Sweet & Sour Sauce
Rice
Chicken Breasts
1 Egg
Rice Vinegar
Flour
Peanut (or Canola) Oil
Chopped Onion
Chopped Bell Pepper
Chunk Pineapple
Maraschino Cherries

Directions:
Cut 2 plump chicken breasts into bite size pieces. Scramble a fresh egg with a tablespoon of rice vinegar
Dip chicken pieces in egg mix and then coat with flour.
If you are like me and want sweet and sour more often than you want to clean an oil deep fryer, put ½ inch peanut (or canola) oil in a pan and heat to 350° ( chicken will sizzle when temperature is right) Fry chicken piece till golden (turning once in the process)
Place cooked chicken pieces on paper towel to drain excess oil.
In a saucepan lightly sauté ½ chopped onion and ½ chopped bell pepper in peanut oil.
Add Chef Shamy Cherry Lime Sweet & Sour Sauce and a ½ cup chunk pineapple and ½ cup of maraschino cherries. Toss in Chicken until coated. Serve with rice.
For a spicy variation of this dish add one small chopped pepper or a tsp of Chinese garlic chili sauce.
